Lazy Barbecue Chicken

This is from a vintage cookbook from Saluda, South Carolina called Taste of Hollywood, Hollywood Elementary School. This caught my attention because it sounds easy peasey and delicious.

Ingredients:

  • 1 6oz bottle of coca cola
  • 1 c catsup
  • 1 Tbsp Worcestershire sauce
  • garlic to taste
  • 1 medium chicken, disjointed

Place all ingredients in a large skillet and cover. Simmer for 45 minutes to 1 hour or until chicken is tender. Serve with rice.

Hot Slaw

Cooking with bacon grease? How could you go wrong. 🙂 This reminds me of recipes I had as a kid, but with hot bacon grease and spinach. Will have to give this one a go!

This recipe is from the vintage cook book Christ Church Cook Book Savannah, Georgia published in 1972.

Shred cabbage (2 pounds). Cut 6 strips of bacon into pieces and fry crisp. Remove from grease. Add 1/4 pound brown sugar, 1/2 teaspoon celery seed, 1/2 teaspoon dry mustard, 1/2 teaspoon salt and 1/4 cup vinegar in grease. When mixture is very hot add cabbage, turning it over until well mixed and cooked. Add the bacon bits.

Mushroom Pancakes Au Gratin

Never heard of this before. Bill loves mushrooms, we will be trying it. 🙂 This is from the vintage cookbook Christ Church Cook Book Savannah, Georgia.

Mix or shake together a batter of 2 cups of milk, 1/2 cup of flour, 1 egg, 1/2 teaspoon salt until smooth. Put in refrigerator for about half an hour. In the meantime melt 2 tablespoons of butter in saucepan, add one small chopped onion and one can of mushrooms (save the juice) and let it cook until onion is soft and golden. Sprinkle about 2 tablespoons of flour in the pan and mix well. Add the juice from the mushrooms and a canned milk or cream, a little at a time, till you have a thick creamy sauce. Season with salt, pepper, and sherry. Fry the pancakes paper thin. Put about one and a half tablespoons of the mushroom filling on each and roll up. Put the rolls on an ovenproof plate and sprinkle with Parmesan cheese on top. Broil under the broiler till cheese is melted and pancakes are hot. This dish can be made a day or two ahead and be put in oven to heat before serving. It is a nice lunch dish and also make a nice dish for a smorgasbord.

Cheese Biscuits

This recipe is from the Christ Church Cook Book in Savannah, GA. Published in 1972.

Ingredients:

  • 1 pound New York State sharp yellow cheese
  • 1 pound butter
  • 4 cups bread flour
  • salt, cayenne

Mix, shape rolls in wax paper and refrigerate. Slice, top each with paprika, half pecan. Bake 425 degrees to 450 degrees till light brown on edges.

Lemon Bars Deluxe

My Mom used to love lemon desserts. I wish she were still with us so that I could make her these.

This recipe is from the Christ Church cookbook in Savannah, GA published in 1972.

Ingredients:

  • 2 c flour
  • 1/2 c XXXX sugar
  • 1 c butter
  • 4 beaten eggs
  • 2 c granulated sugar
  • 1/3 c lemon juice
  • 1/4 c flour
  • 1/2 tsp baking powder

Sift together 2 cups flour and XXXX sugar. Cut in butter until mixture clings together. Press onto bottom of 9 X 13 baking pan. Bake in 350 degree oven for 20 or 25 minutes or until lightly browned. Beat together eggs, granulated sugar and lemon juice. Sift the 1/4 cup flour and baking powder; stir into egg mixture. Pour over baked crust. Bake at 350 degrees for 25 minutes longer. Cut into bars. Makes about 30.

Oriental Salad

This is another recipe from the vintage cookbook North Dakota Where Food is love published in 1994. I can remember this being a favorite that was brought to pot lucks often when I was a kid. 🙂

  • 1 (1lb) pkg shredded cabbage with carrots
  • 2 pkg Ramen noodles (oriental flavor)
  • 1 c sunflower seeds, chopped
  • 3/4 c almonds

Dressing:

  • 5 Tbsp white vinager
  • 3/4 c vegetable oil
  • 2 Tbsp soy sauce
  • 3 Tbsp sugar
  • 2 pkt Oriental-flavor dry soup base from above noodles

Make dressing ahead and chill. Combine cabbage, carrots, and onions (I didn’t miss the onions in the ingredients – there are none listed). Just prior to serving, add sunflower seeds, toasted almonds, and uncooked Ramen noodles, crushed. Toss lightly with dressing and serve.

Chicken Normandy

This recipe from the vintage cookbook North Dakota Food is Love has a note that it is ‘A favorite of the “Seniors”‘

  • 1 box seasoned croutons
  • 1/2 stick margarine, melted
  • 1 c chicken broth

Mix together; put 1/2 c of the crouton mixture in the bottom of a 9×13 inch pan. Spread 3 cups cubed, cooked chicken or turkey over crouton layer.

Mix together:

  • 1/2 c chopped onion
  • 1/2 c chopped celery
  • 1/2 c Miracle Whip
  • 1 can cream of chicken soup
  • 1 c milk
  • 1/2 tsp poultry seasoning

Spread this over the chicken or turkey. Top with remaining croutons. Mix together:

  • 2 eggs slightly beaten
  • 1 c milk
  • 1 can cream of mushroom soup

Spread over croutons. Bake at 350 degrees for 45 minutes. Sprinkle with grated cheese; return to oven for 10 minutes. Let stand a few minutes; cut and serve.

Great-Great Grandmother Cowen’s Soft Ginger Cookies

This recipe is from the vintage cookbook North Dakota Where Food is Love published in 1994. The recipe gives credit to Mary Cowen (1869-1965).

  • 1/2 c butter
  • 1/2 c lard
  • 1 c sugar
  • 1 c molasses
  • 1/2 c sour milk
  • 2 eggs
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 2 tsp baking soda

Use enough flour to make a soft dough; stiff enough to roll out on a floured board, about 1/4 inch thick. Cut out and sprinkle with sugar. Bake on greased cookie sheet. Bake at 350 degrees for 10 to 12 minutes.

Brookville Hotel Coleslaw

This is a recipe from the North Dakota Where Food is Love vintage cookbook. This recipe was contributed by Helen Fitzpatrick.

  • 1 1/2 lb shredded cabbage
  • 1 tsp salt
  • 1/3 c vinegar
  • 1 c whipping cream, whipped

Refrigerate cabbage several hours before mixing in dressing. Mix in other ingredients (in order). Chill. Add whipped cream just before serving.

Sunflower Seeds and Pasta Salad

This is another recipe from the vintage cookbook North Dakota Where Food is Love published in 1994.

Sunflower and Pasta Salad

  • 4 oz bowtie pasta cooked and drained
  • 1 c cherry tomatoes, halved (about 8)
  • 1/4 c black olives cut in half
  • 1/2 c thinly sliced cucumber
  • 1/4 c thinly sliced radishes
  • 1/4 c roasted sunflower seeds
  • 2 Tbsp lemon juice
  • 2 Tbsp sunflower oil
  • 1/4 tsp garlic salt
  • Dash of pepper
  • Additional sunflower seeds

Combine the cooked and drained pasta, cherry tomatoes, black olives, cucumber slices, radish slices, and sunflower seeds. Beat well the lemon juice, sunflower oil. garlic salt and pepper. Pour over the pasta mixture; toss lightly to coat all ingredients. Chill for several hours or overnight, stirring occasionally. Sprinkle with additional sunflower seeds.
