Soup for Two

This is a simple little soup recipe, but I thought it is interesting because it is a soup base for whatever vegetable you choose.

Cook about 2 cups of corn and 1 medium onion until done. Put it in blender, barely chop.

In a pan melt 2 tablespoons butter; add two tablespoons flour. Mix, add 1 c. milk. Cook til medium thick. Add corn mixture and warm. If too thick, add a little more milk.

You may substitute squash or broccoli instead of corn.

This recipe is from ‘Our Best Oakdale Club’ published in 1985. The person contributing the recipe was Virginia Beaver.
