Sunflower Seeds and Pasta Salad

This is another recipe from the vintage cookbook North Dakota Where Food is Love published in 1994.

Sunflower and Pasta Salad

  • 4 oz bowtie pasta cooked and drained
  • 1 c cherry tomatoes, halved (about 8)
  • 1/4 c black olives cut in half
  • 1/2 c thinly sliced cucumber
  • 1/4 c thinly sliced radishes
  • 1/4 c roasted sunflower seeds
  • 2 Tbsp lemon juice
  • 2 Tbsp sunflower oil
  • 1/4 tsp garlic salt
  • Dash of pepper
  • Additional sunflower seeds

Combine the cooked and drained pasta, cherry tomatoes, black olives, cucumber slices, radish slices, and sunflower seeds. Beat well the lemon juice, sunflower oil. garlic salt and pepper. Pour over the pasta mixture; toss lightly to coat all ingredients. Chill for several hours or overnight, stirring occasionally. Sprinkle with additional sunflower seeds.
