Lemon Bars Deluxe

My Mom used to love lemon desserts. I wish she were still with us so that I could make her these.

This recipe is from the Christ Church cookbook in Savannah, GA published in 1972.

Ingredients:

  • 2 c flour
  • 1/2 c XXXX sugar
  • 1 c butter
  • 4 beaten eggs
  • 2 c granulated sugar
  • 1/3 c lemon juice
  • 1/4 c flour
  • 1/2 tsp baking powder

Sift together 2 cups flour and XXXX sugar. Cut in butter until mixture clings together. Press onto bottom of 9 X 13 baking pan. Bake in 350 degree oven for 20 or 25 minutes or until lightly browned. Beat together eggs, granulated sugar and lemon juice. Sift the 1/4 cup flour and baking powder; stir into egg mixture. Pour over baked crust. Bake at 350 degrees for 25 minutes longer. Cut into bars. Makes about 30.
