Chicken Normandy

This recipe from the vintage cookbook North Dakota Food is Love has a note that it is ‘A favorite of the “Seniors”‘

  • 1 box seasoned croutons
  • 1/2 stick margarine, melted
  • 1 c chicken broth

Mix together; put 1/2 c of the crouton mixture in the bottom of a 9×13 inch pan. Spread 3 cups cubed, cooked chicken or turkey over crouton layer.

Mix together:

  • 1/2 c chopped onion
  • 1/2 c chopped celery
  • 1/2 c Miracle Whip
  • 1 can cream of chicken soup
  • 1 c milk
  • 1/2 tsp poultry seasoning

Spread this over the chicken or turkey. Top with remaining croutons. Mix together:

  • 2 eggs slightly beaten
  • 1 c milk
  • 1 can cream of mushroom soup

Spread over croutons. Bake at 350 degrees for 45 minutes. Sprinkle with grated cheese; return to oven for 10 minutes. Let stand a few minutes; cut and serve.
