So when I saw this I couldn’t pass up sharing it. We loved these as kids. This version is barbecue beef, but we did this with so many combinations. One of our favorites was pizza sauce, cut up peperoni, and mozzarella. As kids we made these a lot ourselves because it was easy to make with ‘whomp’ (canned) biscuits. Also, we like to break the newer super flaky biscuits in half. When we made these as kids the biscuits weren’t quite so big and didn’t puff up as much.
This recipe is from a vintage cookbook from Saluda, South Carolina. The book is titled Taste of Hollywood – Hollywood Elementary School.
Ingredients:
- 1 lb ground beef
- 1/2 c barbecue sauce
- small onion chopped
- 1 1/2 Tbsp brown sugar
- 1 8oz can refrigerated biscuits
- 3/4 c shredded Cheddar cheese
Sauté ground beef and onion until browned, stirring to crumble; drain off pan drippings. Stir in barbecue sauce and brown sugar. Place each biscuit in greased muffin cups, pressing to cover bottom and sides. Spoon mixture into cups and sprinkle with cheese. Bake at 400 degrees for 10 to 12 minutes. Makes 12.
